WINEMAKING Winemaking note These Cabernet vines are gown along the banks of the Goulburn River, the sandy soils accentuating the grapes flavour and colour. The grapes are picked at their peak ripeness and brought into the winery where fermentation occurs and the wine is gently turned over every 8 hours. This gentle extraction aims to find the perfect balance between fruit flavour, tannin and structure. The wine goes through natural malolactic fermentation and post racking is tucked away in French oak puncheons. After regular tasting and once the wine has reached its ideal balance, select barrels are blended together and put into bottle. Varietal composition 100% Cabernet Sauvignon Alcohol 14.5% Winemaker Jo Nash and Olivia Forbes
