2019 Quarry Road Cabernet Malbec

The wine is tightly bound with fine, grippy tannins, that provide  substance to the palate. A wine that will age gracefully.  Background Story  ‘Quarry Road’ - All major buildings were made by  hand, from stone quarried on site.  Vintage.  The combination of a dry 2018 winter and a  cold spring led to the vines setting a lower  than average crop. Prolonged dry conditions  and events of extreme heat during January  and February reduced yields further.  Picking commenced on the 26th of February  and progressed at a frantic pace. With  daytime maximum temperatures reaching  above 35C for eight consecutive days, most  varieties reach the desired sugar levels quite  quickly.  The last fruit came through the winery doors  on the 19th of March.  Winemaking  This blended wine is made up of 75% Cabernet  Sauvignon from our Rosehill block, 20%  Malbec from the original Sevenhill property  and 5% Cabernet Franc also from the original  Sevenhill property. Each were fermented  separately before blending in October 2020.  The wine received only 6 months in older  French oak hogsheads.  Vintage: 2019  Alcohol: 13.5%  Standard drinks: 8.0  Acidity: 6.48 g/L  p/H: 3.46  Bottled: June 2021.
