Winemaking
Alcohol:12.4%Bottle Size:750mlpH:3.5Winemaking Notes:45% of the blend was destemmed then crushed with open rollers, before being pressed early and barrel fermented in French oak barriques, half of which was new oak. After fermentation this component was matured in a large format (2000 litre), old oak vat. 55% of the blend was treated more ‘conventionally’ with the fruit destemmed and crushed with open rollers to introduce whole berries into the ferment, as well as the inclusion of 1% Viognier for co-fermentation
